Rice flour is used throughout Iranian cuisine where it has an extensive history, it is mostly used in desserts where it adds a lightness to whatever it is baked into to such as the always delightful Naan Berenji. Many of the sweets for Nowruz are based in rice flour but a dessert that is welcomed year round is the popular Phirini (or Fereni) a rice pudding often made with saffron, tumeric, cardamom and milk.
