Fresh Sour Grapes - Ghooreh
Unripe grapes are sometimes also referred to as sour grapes. In Persian cuisine they are used to add sourness to certain dishes. There are a few different recipes where sour grapes are used sometimes instead of or with Dried Persian Limes. The most popular recipes that you can use sour grapes are : Khoresht Bademjan (Stew with Eggplants), Khoresht Kadoo, Khoresht Ghormeh Sabzi, and in the broth for Koofteh Tabrizi and/or Koofteh Berenji. They are not called sour grapes for no reason! These little juice green jewels are TART! But they get simmered quickly in stews. They add a great taste to your next Ghormeh Sabzi, Khoresh Karafs, Dolmeh Barge Mo, Khoresh Kadoo and even Khoresh Bademjoon. Use them fresh or pickle them in salt water brine or freeze them. Either way, they are simply delicious.
