"Damkoni" is used to make rice the Persian way! Our fitted set has an elastic band around the fabric covered white batting to assure tight fit of the set aroun pot lid. "Damkoni" is put on pot lid during the process of cooking basmat rice. It is supposed to absorb the steam that is emitted off the hot rice and to avoid it from condensing on the lid and coming back over the rice and causing it to become soft and over cooked. This set include five pieces total which includes three pieces of differing sizes of "Damkoni" and two matching glove style hot pot holders.
