Kashk, dried whey, is a traditional Iranian dairy product that is yield from straining yogurt. It can be used as a snack or in making dishes such as Kashk Badenjoon and Aash Reshteh as a garnish on top. Some Persian dishes use Kashk as their base too. Due to it being a diary product and super concentrated, it is loaded with calcium and hence popular for its health benefits as well. Traditionally dried whey has added salt. There are other versions with added cumin, low salt and even added Gheareghoroot (another popular sour Persian snack).
